Method
- Whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt in a medium bowl until well combined.
- In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the vanilla extract and egg until fully incorporated.
- Gradually add the dry ingredients to the butter mixture, mixing just until combined.
- Fold in the chopped candied green cherries, red cherries, pecans, walnuts, and diced candied orange peel until evenly distributed.
- Scoop the dough onto parchment-lined baking sheets, leaving about 3 inches of space between each cookie.
- Refrigerate the dough for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- Bake the cookies for 12–14 minutes, rotating the baking sheets halfway through, until the edges are lightly golden and the centers remain soft.
- Transfer the cookies to a wire rack and let them cool completely.
- Whisk together the powdered sugar, orange zest, and brandy until the glaze is smooth and pourable.
- Drizzle the glaze over the cooled cookies and let it set for about 15 minutes before serving.
